in India, we use another way to reduce the bitterness is to scrape off the gnarled tough skin down to a smooth green surface. Then you can salt the stuff and place it in th e sun. This way the bitter juices just drain away. The dark green ones are really the ones you should go for the best taste. Indians consider the white ones with red seeds are just considered spoilt!
